Breakfast for dinner

When I got home from work yesterday, I was craving breakfast for dinner. Banana pancakes, specifically. So I did what any hungry person would do and immediately looked up a recipe.

Banana Oat Pancakes
[adapted from Taste of Home]

3/4 cup old-fashioned oats
2/3 cup flour
2/3 cup whole wheat flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 egg
1-1/3 cups milk
1 cup mashed ripe banana
2 tablespoons vegetable oil
1 tablespoon vanilla


 
Combine dry ingredients in a large bowl


Combine wet ingredients in another bowl


Stir wet mixture into dry mixture until just moistened


Pour batter onto a hot skillet


Voila! Pancakes!


Pancakes + pretty flowers = lovely dinner

*Since I was cooking for one, I halved this recipe. Because I made my pankes large, it made three of them*


And maybe Henry liked them too.

I have never tried this!! It looks really good and sounds delicious!! I think I might have to try this recipe.
